I like to use most fruit trees, alder, hickory, and oak. I use mostly alder and apple. I have a few old apple trees where I hunt, and take the old limbs and make my own chips with a draw knife.

I've heard that you can not use fresh water on the filets, etc... so how do you brine Albacore for smoking? Just dry and rub?

Next time you are in Humboldt go to almquist lumber in Arcata and stock up. All kinds of smoking woods there. A very dangerous store if you are into woodworking.
